That is so interesting! I found that my digestion, mood and sleep changed drastically when I gave up grains. I share my story and information for others that too might have symptoms that they can't figure out. Small diet changes can sometimes have dramatic results. I also believe that everyone is a bio-individual so what works for me might not work for someone else. We all have to learn to listen to our bodies. Cutting things out that might be suspect to a symptom for 30 days and then adding back in slowly, keeping track of mood, weight gain, or other symptoms is an easy way to figure out what your body can tolerate. You might figure out how good you can really feel or you might figure out your body digests rice ok! Thanks for the note!

This is very interesting. I didn't know about the resistent or non resistent starches. And even less so about the cooling method. But one thing i found curious is that as a portuguese that's how we cook our rice, with some fat (olive oil) actually, but instead of adding to the boiling water we add it in the very beginning. And we soften some onion and garlic with it, and then we add the rice (sometimes we let it fry a little bit) and just then the water. This is how i been taught all my life. Is funny so see how people cook the same food in different ways throughout the word. Each one with their reason as to why it should be cook in a certain way.
Rice is the only grain/cereal that i eat (is just to yummy to give up on it) but i do intent on giving up on it eventually.
I, too, believe in the nefarious consequences it (grains) has on our body and is sad to see so many people dependent on it without even knowing it.

Loved the article!
