I see recipes for chia seed pudding all the time, but I have never really stopped to make one.  Oh except that one time when I decided to try the recipe from the book Born to Run, if you’ve never read it, its about this amazing group of people, the Tarahumara Indians who can run for 100’s of miles with no rest in sandals that mimic running in bare feet.  With their secrets you too can be born to run!  Needless to say I did not really get the same effects from filling my water bottles with water, chia seeds, lime juice and sugar as they got, all I got was a run where I was chewing the whole time and a lot of black seeds stuck in my teeth by the end but I digress….

I have bought the pre-made ones at Wholefoods before but they did not wow me. I know how amazingly fantastic chia seeds are for you, hydrating, full of fiber, high in magnesium, high in Omega-3 fatty acids (actually ALA which is not the great one) but still good.  I mean come on “chia” is the ancient Mayan word for strength!

So I looked at a lot of different recipes and methods to make the pudding and this one is closest to Michele Tam’s version from Nom Nom Paleo (don’t look at her’s because then you’ll never come back to my site) she has some mad photography skills.  But I’ve changed a few things and added some pumpkin because PUMPKIN!  Hope you like it, it’s really a great great way to start your day!

Instructions
  1. Combine the first 6 ingredients. Blend or mix with a whisk until incorporated.
  2. Pour in the chia seeds and mix.

  3. Let stand on counter for 10 minutes. Give it one more stir (It should have started firming up), then move to the refrigerator. It should last for a week.

  4. Serve with fruit and nuts or other seeds, maybe a drizzle of honey or maple syrup. Yum! Such a great breakfast or snack!
