I love to cook, I love to eat.  I love to make things that make everyone in my family happy.  That doesn’t always happen :)  I would not normally post a boring chicken recipe but this one was so easy and delicious and made the kids, husband and me all happy!  I sometimes find that people turn their noses up at thighs and legs and think that the only way to go is the breast.  Dark meat supposedly has more fat and calories…truth? the difference is about 4 calories between a breast and a thigh and about 1 gram of fat!  Dark meat also has some benefits that white does not.  It contains more myoglobin (carries oxygen to muscle cells) , zinc, and vitamins B6 and B12.  It is more succulent, has a wonderful flavor and is always moist.  Give these ginger-garlic chicken thighs a try.  Come on over to the dark side…..

  1. Melt the ghee and add the other ingredients. Salt and pepper the thighs and pour the liquid over the chicken. I like to put some fork marks in the chicken, not sure if that actually gets the sauce down into the chicken better, I just always do it! Bake at 425 for about 30 minutes or until the thermometer reads 165. Let it rest about 10 minutes once you take it out. I served this with some delicious pad thai. Recipe to follow!
