Parmesan and Bacon crusted Salmon with Kale and Clam Butter sauce

salmon with bacon

Well that’s a mouthful!  Cooking fish is so hard.  I love salmon but getting anyone else to eat it is a challenge. I almost always order it when I go out because I have had so many fails at home. There is also not much enthusiasm when I announce “I’m making fish for dinner”…. and you know I live for approval from my teenagers lol NOT!  But I do like.. Read More

I love sauces.  To me sauce makes the meal, whether it be tomato sauce, or hot sauce or barbecue sauce or butter sauce…you get my point.  It complements the flavors of the food and makes most everything taste better….chocolate sauce :).  Chimichurri is a delicious green sauce used for grilled meat, originally from the Rio de la Plata, Argentina. Chicken and Broccoli Alfredo (Grain-Free option)

Chicken Broccoli Alfredo

My daughter loves Fettuccine Alfredo.  I mean what’s not to like?  Butter, cream and cheese…sigh.  It’s not the fat content that always got me but the noodles and heaviness of the dish.  I took a standard recipe and tweaked it a little to still taste rich and creamy, added some protein and veggies and tossed it with zucchini noodles instead of pasta.  I did serve it to my daughter over..
