I love beautiful summer tomatoes and what better way to eat them (besides plain with a little salt!) than in this beautiful simple salad. The dressing is fabulous and would be good over meat or even on sandwiches!
Ingredients
Salad
- handful greens (I used arugula)
- 3-4 large fresh grape tomatoes or any other tomato variety
- 1/2-1 avocado sliced
- handful toasted pumpkin seeds
- diced chicken (optional)
Basil Dressing
- 1 cup packed basil
- 5-6 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 1 Tbsp mayo (I used spicy mayo!)
- 2 Tbsp chopped red onion
- salt and pepper to taste
Servings: person
Instructions
- Plate the salad ingredients.
- Toast the pumpkin seeds in a skillet with a little olive oil and salt.
- Meanwhile blend in a food processor or blender all dressing ingredients, first adding 4 Tbsp of oil and adding the other 2 if needed. Store extra dressing in fridge.
- Drizzle dressing over salad and enjoy!
