Greek flavors are some of my favorites, but how do you pronounce gyro? lol. Greek food has strong flavors of olive oil, used in most dishes. Tomato is an important vegetable in traditional cuisine along with the flavorings of oregano, mint and garlic. Did you know the typical greek salad is known in Greece as the “village salad” and is essentially a tomato salad with cucumber, red onion, feta cheese and kalamata olives, usually dressed with olive oil? I sat eating this plate of eggs this morning envisioning myself on a Greek beach, the waves crashing….well really all I could hear is my dog snoring but here’s a picture to get you in the mood. Enjoy!
Swirl about 1/2 Tbsp olive oil into a heated pan. Add in garlic and spinach. Season with salt and pepper. Cook until wilted.
Meanwhile mix the herbs into the eggs and poor over the greens mixture. Add the tomato, green onion and feta cheese. Season with salt and pepper.
Cook eggs until desired consistency stirring occasionally.
Plate and serve!
These measurements are approximate. When I cook I usually just chop everything up and throw in what looks right. Feel free to add more or less of the flavors you love. Red onion or olives would be really good in this dish too!
