Someone made an appetizer at a party I was recently at with watermelon, feta and mint on a toothpick. I was so blown away by the flavor combination I decided to try it as a salad. This is the result. You can slice the onion, but when spiralized it makes it so fun and a great presentation! Happy Summer!
Ingredients
- 3 cups Watermelon (about 1/2) or more....cut into cubes to fill a bowl
- 1 red onion spiralized or sliced long
- feta cheese 1/2 tub or enough to cover watermelon
- handful mint chopped
- 1/4 cup red wine vinegar
- 1 Tbsp honey
- sea salt

- Spiralize onion. Pour mixture of vinegar, honey and a little salt over the onions and let marinate for at least 20 minutes or more
- Sprinkle cheese and chopped mint over over watermelon, add marinated onions
- Will last as long as cut watermelon does, best to eat in the same day but can last in the fridge for a day or two! (I know I'm eating my leftovers tomorrow!) The marinated onions are good on other things too and will last in the fridge for days!
