Jicama is such a versatile vegetable that I always forget about!  It is so crisp with a similar texture to an apple.  It is great as a salad garnish but takes main stage in this asian inspired slaw!

Instructions
  1. Boil the beans in water for about 5 minutes until green and slightly crisp still. Run under cool water.
  2. Prepare the jicama, carrots and tomatoes
  3. Combine the fish sauce, cilantro, honey, lime juice, garlic and pepper in a bowl
  4. Pour over veggies and toss well. Garnish with green onion and/or toasted nuts (optional)
