Jicama is such a versatile vegetable that I always forget about! It is so crisp with a similar texture to an apple. It is great as a salad garnish but takes main stage in this asian inspired slaw!
Ingredients
- 1 cup green beans trimmed and halved
- 1 medium jicama peeled and spiralized
- 3 carrots grated or spiralized
- 10 grape tomatoes halved
- 2 Tbsp fish sauce
- handful cilantro chopped
- 2 Tbsp honey
- 1 lime juiced
- 1 crushed garlic clove
- 1/4 tsp cayenne pepper

Instructions
- Boil the beans in water for about 5 minutes until green and slightly crisp still. Run under cool water.
- Prepare the jicama, carrots and tomatoes
- Combine the fish sauce, cilantro, honey, lime juice, garlic and pepper in a bowl
- Pour over veggies and toss well. Garnish with green onion and/or toasted nuts (optional)
