I love sauces.  To me sauce makes the meal, whether it be tomato sauce, or hot sauce or barbecue sauce or butter sauce…you get my point.  It complements the flavors of the food and makes most everything taste better….chocolate sauce :).  Chimichurri is a delicious green sauce used for grilled meat, originally from the Rio de la Plata, Argentina. It is usually made of finely-chopped parsley, minced garlic, olive oil, oregano, and vinegar.  I added a little cilantro to mine because…cilantro (did you know we really can’t be friends if you don’t like cilantro!)  just kidding.  It’s actually in your genes that makes cilantro taste like soap to some people!  The horror!  Anyway this sauce is also delicious on eggs, pasta, any meat, fish, sweet potatoes or grilled veggies.

If my glowing paragraph above doesn’t convince you of how great this stuff is consider that parsley is high in vitamin K, C, A and iron. It is sometimes used as a digestive aid and used to reduce blood sugar levels.  It’s a great vegetable all around and this is a great way to incorporate it into your diet!

  1. Throw all ingredients into a food processor or blender and pulse until blended but still chunky!
