Ingredients
- 1/2 spiralized sweet potato
- 2 Tbsp olive oil
- 2 pieces cooked bacon
- 2 Tbsp red onion
- 1 clove garlic (pressed)
- 1 tsp red pepper flakes
- 1 egg
Servings: person
Instructions
- Spiralize 1 peeled sweet potato. For this dish I used 1/2 of the spiralized portion. Save the rest or double recipe!
- Sauté spiralized sweet potato in 1 Tbsp of olive oil and little water for about 10 minutes until softened or to desired consistency. The sweet potato softens quicker with a lid on the pan. Set aside.
- Cook 2 pieces of bacon and chop into pieces.
- Add 1 Tbsp of oil to pan and sauté onion, garlic and red pepper flakes. After a few minutes add bacon.
- Whisk egg well with some salt and pepper in a bowl.
- Put softened sweet potato noodles back in pan with bacon and slowly add the egg. The egg will scramble. Serve immediately
