I’m a huge fan of coconut wraps as a substitute for tortillas or bread but some people don’t like the flavor. I have not had much luck in finding a gluten free or grain free bread that I really like. Plus really? $10.99 for a loaf of bread? I’ve experimented with a few recipes and came up with this one recently and I really like it! It has a very neutral taste is bread like and holds a sandwich together well. It comes out round like a roll if you make it in mini-pie tins like I used, here are some from Amazon (I can’t find the ones I used anywhere! I know they are 5 inch round). I used them today to make a delicious tuna salad sandwich using Primal Kitchens avocado mayo (yum!). - 1 cup almond flour (I used Bob's Red Mill)
- 1/2 cup Arrow Root flour (I used Bob's Red Mill)
- 1/2 cup ground flax meal
- 1/2 cup applesauce (unsweetened)
- 4 eggs
- 2 tsp baking powder
- 1 tsp apple cider vinegar
- 2 Tbsp Palm Shortening (could use butter or coconut oil)
- pinch sea salt
- Mix dry ingredients together. Add in wet ingredients and mix to combine
- Place 6, 5 inch round pans on a baking sheet. Grease well. Distribute batter evenly.
- Bake for about 12 minutes until firm. (baking time may vary depending on how thick you make the rolls)
- Allow to cool then slice in half and store in refrigerator!
- Use for yummy sandwiches!

I haven’t eaten sandwiches in so many years I wouldn’t know how to make one, but this just might be the answer!
