I’m a huge fan of coconut wraps as a substitute for tortillas or bread but some people don’t like the flavor.  I have not had much luck in finding a gluten free or grain free bread that I really like.  Plus really? $10.99 for a loaf of bread?  I’ve experimented with a few recipes and came up with this one recently and I really like it!  It has a very neutral taste is bread like and holds a sandwich together well.  It comes out round like a roll if you make it in mini-pie tins like I used, here are some from Amazon (I can’t find the ones I used anywhere!  I know they are 5 inch round).  I used them today to make a delicious tuna salad sandwich using  Primal Kitchens avocado mayo (yum!).  I hope you like them as much as I do!!I’m a huge fan of coconut wraps as a substitute for tortillas or bread but some people don’t like the flavor. I hope you like them as much as I do!!
